Cabernet Sauvignon/Merlot Blend
Because the grapes are being liberated from California to become wine made in Texas, we believe they should be absolved of their checkered past! Absolution is predominantly a Cabernet Sauvignon/Merlot blend. While 2014 will have a higher representation of Merlot in the blend, future vintages are expected to be more Cabernet dominant.
The 10 acres of Cabernet are dispersed across the estate in 4 vineyard blocks growing on two separate hills with varying slopes. The character is different from each block which adds a wonderful complexity to the wine, coupled with new French and American oak barrel influences. The former property owner, Larry Stanton, held back small amounts and produced about 200 total cases a year of his own label. The 2009 Cabernet is the best Paso Robles Cabernet our owners have ever tasted and is a big reason why they purchased the property. It is bold, with solid, round tannins, and delivers a full fruit mouth with chocolate and espresso overtones. It is quite Napaesque in its flavor profile and would compete with the best wines from any wine region.
The 1-acre block of Merlot is on the far Southeastern edge of the property on a gentle slope. The vines seem to be very attuned to this location and consistently produce well-ripened fruit with dark color and flavors. Although some past vintages have been made as a single-varietal wine, we believe the vineyard is very well suited to produce a Bordeaux style meritage.
In 2016 we planted two acres of Petite Verdot below the Syrah blocks. We see this Bordeaux varietal in the Absolution blend in future years, imparting Petite Verdot's characteristic rich and rustic dark fruit aromas and flavors.
2015 Tasting Notes
A textbook, well-extracted garnet hue leads to aromas of blackberry, black plum, eucalyptus, and mocha entwined with earthy notes of oak, cedar, dried tobacco leaves, and crushed peppercorns. Showcasing elegant complexity and great balance in its youth, this wine is poised for greatness.
